Hi Chandrika, really enjoyed this whilst eating my egg curry (the chef's words, not mine) at work. Can't wait to try and cook it at home, and to learn more and cook more as this series continues.
I was recently reading about a bit of a hoo-ha regarding the word curry and its incorrect usage in the west. There was some faily interesting opions on it (eg https://www.spectator.co.uk/article/curry-isn-t-racist), thought you may be interested if you havent seen the debate already.
This was wonderful and so easy to make. I used purple cabbage and we put the finished dish over mango rice. It was a bit too spicy for my little one, so I also cooked up some kielbasa, which actually paired well with the cabbage dish. Strange fusion, but it worked.

And fourth time around, it's still one of my favorites. It's amazing how sweet it renders even a cabbage which maybe isn't totally fresh. :-)
